All this summer, I have been working on recipes that I can cook at the campsite. I was on vacation this past week, and decided to try a Hawaiian take on pork loin. This one is delicious and ridiculously easy with no marinading.
Here’s What You’ll Need:
- 1/4 cup low salt soy sauce
- 1/4 cup mirin
- 2 tsp minced fresh ginger
- pineapple. cored, peeled, and sliced into rounds, or planks like I did
- pork loin, cut into 1 inch pieces
- Your favorite pork BBQ rub. (They sell some great ones at Kitz & Pfeil Ace Hardware and you truly can’t go wrong with any one you pick)
- green onions, thinly sliced
Prep your grill to cook over direct heat. Slice up your pineapple. Dice up your pork loin, coat it in a little oil, and toss it in your favorite rub. Set aside.
Get the pineapple on the grill, and grill it until it’s nicely done. Mine got a little char, but it was just fine.

While that’s cooking, put your pork pieces on some skewers and get them ready to go on next.

Combine the soy, mirin, and ginger in a small saucepan and bring it to a simmer. Once the everything gets a chance to get cozy – a couple minutes – you can take it off the heat and pour it into a large bowl.
When the pineapple is done, give it a good medium dice chop and add it to the bowl. Get those skewers on the grill!
Two quick notes: Always soak your skewers in water for about 30 minutes if using wood, so they don’t catch fire. And have a meat thermometer handy – the pork will cook fast. You only need to get it up to 145 degrees to be done. Flip the skewers a couple times to get some nice color all around and you’ll like be done.

Remove the pork from the skewers and add it to the bowl with the pineapple and sauce. Toss in at least a good 1/3 cup of thinly sliced green onions, both the white and green parts, and toss it all together to coat.

I really like this recipe, because there are many times you would like to grill something TODAY, and not have to wait overnight for a marinade to do it’s handy work. This was awesome, and will become a summer staple at our house.
