Here’s what you’ll need for the dry rub:
- 1 Tbsp Worcestershire powder*
- 2 tsp ground black pepper
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp kosher salt
- 1 tsp ground white pepper
- 1/2 tsp ground ginger
- 1/2 tsp dry mustard
- 1/4 tsp sugar
- 3-4 sirloin steaks
Mix the ingredients together the ingredients, and reserve 1 tsp for the sauce. At least 2 hours before you plan to grill, rinse the steaks, pat dry with a paper towel and dredge with the rub. Then wrap in plastic wrap and place back in the refrigerator.
Here’s what you’ll need for the sauce:
- 1 Tbsp butter
- 3 cloves garlic, minced
- 1 cup fruity red wine
- 1/2 cup beef stock
- 2 tsp ground green pepper
- 2 tsp sugar
- 1/4 tsp Worcestershire sauce
- 1/4 tsp ground black pepper
- 1/8 tsp ground white pepper
- Salt
In a medium saucepan, warm the butter and saute the garlic over medium heat. Add the remaining ingredients (and reserved rub) and simmer the mixture over medium heat for 20 minutes or until reduced by one third.
Remove the steaks from the refrigerator and let sit at room temp for 30 minutes. Grill to desired doneness.
