Here’s what you’ll need:
- 1 lb. cubed smoked turkey *
- 1 medium onion, diced
- 1 – 1/2 tsp garlic powder
- 1 Tbsp canola oil
- 2 cans Northern beans, undrained
- 1 can chicken broth (14 oz)
- 2 cans diced green chilies, undrained
- 1 tsp salt
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
- 8 oz sour cream
- 1/2 cup heavy cream
*If using raw chicken, cut into cubes, and saute with the onions and garlic until the chicken is no longer pink. For pre-cooked meat, continue as follows.
Add the canola oil to a medium-hot pan, and saute the onions until translucent. Add the garlic powder during the final minute or so.
Add the meat, beans, broth, chilies, and seasonings. Bring to a boil. Reduce heat and simmer for at least 30 minutes.
Just before serving, remove from heat. Stir in the sour cream and heavy cream. Serve with tortilla chip strips, shredded cheese and chopped jalapenos, if desired.
