- Bone in turkey breast
- BBQ Rub
- Olive Oil
And for the injection…
- 1/2 cup clarified butter*
- 1 cup apple juice
- 1/2 cup honey
- 2 Tbsp Cajun seasoning
To make the injection, first make the clarified butter. Essentially, melt the butter and skim off the milk solids. Then add the other ingredients and bring to a low boil, stirring to completely dissolve the honey. Allow to cool completely.
Rinse the turkey breast and pat dry with paper towel. Reserve 1/2 cup of the injection. Use the rest by injecting the breast about every 1 inch. Be sure to move the needle around so you get the juice all over inside the meat. Rub the outside of the breast with olive oil and cover with your favorite rub. Back into the fridge for 4 hours to overnight.
Set up your grill for direct heat at about 350°. Cook until the internal temp is 165°. Took me about 90 minutes.
Remove from grill, inject with the remaining injection sauce and let sit, tented, for about 15-20 minutes.
