What’s better than bacon? Smoked bacon that’s been glazed and smoked for three hours. They call it Pig Candy, but you will call it delicious!
Here is what you’ll need…
- 1 lb thick cut bacon
- 1/2 cup brown sugar (I used dark)
- 1/2 cup of your favorite rub (Here’s mine)
- 1/4 cup maple syrup
- 1/4 cup Dr Pepper
Preheat the smoker to 250°. While it’s pre-heating, place the bacon on a bradley rack in strips. You’ll want to put a foil pan underneath to catch all the drippings. I like to buy the disposable foil cake pans to make clean-up easier.
Put the bacon in the smoker and let it cook with full smoke for 50-60 minutes. I used cherry wood.
While it’s cooking, make the glaze. Whisk the brown sugar, rub, syrup and soda together in a small mixing bowl.
After the first 50 minutes, apply the glaze to the bacon using a sauce brush, flip it over and apply glaze to the other side. Put it back in the smoker on full smoke for another 30 minutes. Then, apply the glaze to both sides again. Put it back in the smoker for a final 30 minutes.
Then, take it out of the smoker and let it cool on wax paper to firm up.
Try not to eat it all in one sitting.
