Here’s what I made this week. Coconut Drop Cookies! I had some coconut left from the brownies I made last week, so I decided to whip up some cookies. It’s an easy recipe, and here’s what you’ll need.
- 1 cup shortening
- 1 cup sugar
- 1 cup packed brown sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- 2 cups old-fashioned oats
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup flaked coconut
- 1 cup chopped walnuts
Preheat oven to 350. In a large bowl,cream the shortening and sugars
until light and fluffy. Add the eggs, one at a time,
beat well. Beat in vanilla.
Combine the flour, oats, baking powder, baking
soda and salt. Gradually add to creamed mixture
and mix well. Stir in coconut and walnuts.
Drop by rounded tablespoonfuls onto
greased baking sheets. Bake for 12 minutes or until golden brown. Cool
for 2 minutes, then move to wire racks.
