Skirt steaks can be delicious, but they can also be tough. Be sure to marinate them well. Here is a great marinade for steak skewers.
Here is what you’ll need:
- 1/2 cup dark beer
- 2 Tbsp fresh lime juice
- 2 Tbsp dark brown sugar
- 1 Tbsp hot sauce
- 1 Tbsp Dijon mustard
- 1 Tbsp vegetable oil
- 2 tsp cumin
- 2 garlic cloves, minced
- 1 tsp smoked paprika
- 1 tsp salt
- 1 lb skirt steak
Mix the ingredients together in a resealable bag.
Cut the steak against the grain into strips, and add it to the bag. Place the bag back in the fridge and let marinade for at least 4 hours or up to overnight.
Remove the steak from the marinade and discard the remaining marinade. Thread the steak onto skewers, then grill over high heat to your desired doneness, approximately 4-6 minutes per side. Be careful not to overcook.
