When you’re looking for something quick and delicious for the smoker, you can’t beat chicken. I often use a beer can roaster and stand my chicken up, but this time, I wanted to just try it quick and simple.
Here’s what you’ll need:
- 1 whole chicken
- Your favorite poultry rub (they have a bunch of great one’s at Kimp’s Ace Hardware!)
- 1 small onion, quartered
- 1 lemon, quartered
Pre-heat the smoker to 300 degrees. For this recipe I used lump charcoal and some apple wood chunks. Get the charcoal rolling, and add the wood chunks shortly before you start cooking.
Rinse the chicken, pat dry. Rub a little olive oil over the skin and then apply your favorite rub.

Stuff the cavity with the onion and lemon. Pop it on the smoker and let it smoke until the internal temp gets to 165 degrees. For me, it took just under 3 hours.

At my house, we use these like rotisserie chicken and put it in our favorite recipes. We were heading out camping for the weekend, so we turned this delicious bird into chicken salad and chicken tacos!
