Ribs are the perfect thing to throw on the smoker any weekend. They don’t make much more than you are going to eat, they are relatively inexpensive, and they are always delicious! Any time is a great time to stop by Salmon’s Meat Products for some fresh ribs and get smokin’! Here is a recipe for ribs on the sweeter side.
Here’s what you’ll need:
Dry Rub
- 3 Tablespoons light brown sugar
- 1 Tablespoon onion powder
- 2 teaspoons chili powder
- 1 teaspoon ground mustard
- 1 teaspoon Kosher salt
1 full rack baby back pork ribs. (The glaze will make enough for at least 2 racks, but the rub would need to be doubled)
Glaze
- 1 cup raspberry jelly (no seeds)
- 1/4 cup water
- 1 Tablespoon ketchup
- 3 Tablespoons minced onion
- 2 Tablespoons Worcestershire sauce
- 2 Tablespoons apple cider vinegar
At least a few hours before you plan to smoke the ribs, make the rub and coat the ribs. Mix the dry rub ingredients together and combine thoroughly.
Sprinkle evenly over the ribs being sure to cover them completely. I like to coat them with a little yellow mustard to help the rub stick, but you can use whatever you like. Put them back in the fridge until 30 minutes before you are ready to smoke. Then take them out and set them on the counter so they some up closer to room temp a little.
Depending on the smoker I’m using, I like to cook ribs around 245-250 degrees. Put the ribs in when the smoker gets up to temp. (If you have a water basin, full that baby up) Cook the ribs on full smoke for 2 hours, then take them out and wrap them in foil. Back in the smoker for 2 more hours.
Once you wrap the ribs is a good time to make the glaze. Combine all the glaze ingredients in a small saucepan over medium heat. Whisking occasionally, let this start to bubble a little, then turn it down to a simmer for at least 10 minutes. Remove from heat.
At the end of the 2 hours wrapped, take your ribs out of the foil, coat them well with the glaze, and put them back in the smoker to tighten up. I’d let them go 30 minutes, hit them with another coat of glaze, and then back in for maybe 10-15 minutes. They should come out sticky and beautiful this these.
