Each week, I head out to visit Y100 fans and drop off treats from Festival Foods, as well as something made from my kitchen. This month, I’m bringing along Pumpkin Poppers. Here’s how to make some for yourself.
Here’s what you’ll need:
- 1 3/4 cup flour
- 2 tsp baking powder
- 1/2 tsp each: salt, cinnamon, nutmeg, allspice
- Dash of ground cloves
- 1/3 cup vegetable oil
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla
- 3/4 cup pumpkin
- 1/2 cup milk
Preheat the oven to 350 degrees and coat a mini muffin pan with non-stick cooking spray.
In a large bowl, combine the flour, baking powder and spices and stir to combine.
In a separate bowl, mix together the oil, brown sugar, egg, vanilla, pumpkin and milk. Pour in the dry mixture and stir until just combined. Only fill the muffin tins 3/4 full, and bake for 9 minutes.
Once cooled, it’s time to coat them in cinnamon sugar.
Melt one stick of butter. Combine 2/3 cup white sugar and 2 Tbsp cinnamon. Lightly coat them in butter and toss them in the cinnamon sugar.
