This is my take on this pepper salad. Roasting the peppers in the smoker adds a nice smoke flavor to the whole salad.
Here’s what you’ll need:
- 4 bell peppers, I used a combo of red, orange, and yellow.
- 1 cup diced red onion
For the Salad Dressing
- 1/2 cup extra virgin olive oil
- 1-1/2 lemon juice
- 2 minced garlic cloves
- 1/2 tsp paprika
- 1/2 tsp coriander
- 1/2 tsp cumin
- two dashes of hot sauce
Bring your smoker up to 250 degrees. Coat the peppers lightly in olive oil, and put them in the smoker for around an hour, until they are nice and soft. Then remove them from the smoker, put them in a glass bowl and cover with plastic wrap and let it sit for 20-30 minutes until the skin loosens up.
Meanwhile, combine the ingredients for the salad dressing and mix well.
When the peppers have loosened, remove the outer skins, seeds and stems. Then dice and place in a bowl with any accumulated juices, stir in the onion and the salad dressing.
Refrigerate until ready to serve, at least 30 minutes. Top with some fresh cilantro.
