I’m always on the lookout for things to cook on the grill. This summer, we’ve been spending more time at the campsite, so I’ve been trying to find things that are easy, delicious and can be cooked on a grill or over a fire. These chicken skewers sound spicy, but they are not. And they made some delicious tacos. I also whipped together some quick Pico de Gallo to go with it.
Here’s what you’ll need for the Pico:
- 1 Roma tomato, diced
- 1/2 onion, diced (some people prefer red, I had a white one on hand)
- 2 Tbsp minced fresh cilantro
- The juice of half a lime
- A sprinkle of cumin
Mix together in a bowl and refrigerate until ready to serve.

Here’s what you’ll need for the chicken:
- 1/2 tsp lime zest
- 1/2 cup mayonnaise
- 2 tsp fresh lime juice
- 1 chipotle pepper in adobo sauce, minced
- 1 tsp cumin
- salt
- black pepper
- yellow onion, sliced into 1 inch rings, then cut into 1-inch pieces
- 4 boneless skinless chicken breast halves, cut into 1-inch cubes
Mix all the ingredients from the zest to the cumin in a bowl. Add the chicken and the onion pieces and toss to coat.

Thread the onion and chicken pieces onto skewers to prepare for the grill. Be sure to use an onion on each end to help hold the chicken in place. Once assembled, hit them one time with some salt and pepper. I should mention that if you are using wooden skewers, you should soak them in water for 30 minutes before using. (I use metal)

Grill over direct medium heat with the lid closed turning occasionally until the meat is firm to the touch and opaque all the way to the center… or do what I do and use the instant read thermometer. Once they hit 165 degrees they are safe to eat. Try not to over cook them. No one likes rubbery chicken.

Once the meat is done, let it rest for a moment while you use the grill to warm up your tortillas. Then add the chicken, top with the Pico, and enjoy! These were super good. If you’re wanting to make them a little healthier, you could go with the light mayo. At the end of the day, it’s chicken and fresh veggies. Mom would approve.
