As we are spending a lot of time at our seasonal campsite this summer. I’ve been looking for recipes that lend themselves well to camp cooking. These mini meatloaves were quick easy and delicious.
Here’s What You’ll Need:
- 1 lb ground beef
- 1/4 cup diced yellow onion
- 1 jalapeno, seeded and diced
- 1 large egg
- 2 Tbsp of your favorite pepper jelly
- 1/3 cup panko bread crumbs
Mix these ingredients together well by hand, adding some salt and pepper, and form into six muffin sized balls. Place in a 6 cup muffin tin.


Preheat your grill or smoker for indirect cooking and get it up to 375 degrees.
Place the meatloaves in the muffin pan on the grill and cook for 20 minutes. Then, CAREFULLY, flip the muffin pan over and deposit the meatloaf minis onto the grill. I say carefully, because – full disclosure – two of mine rolled right off… into the dirt. 🙁

Cook 5 minutes or so while you are whisking together 1/2 cup pepper jelly and 1/3 cup ketchup. Spread that glaze over the meatloaves, and cook them for another 15-20 minutes, until they reach an internal temp of 160 degrees.

They were so good, I wish I’d grabbed the two off the ground. LOL.
