This is a great quick side with an Asian flair. I find it pairs well with steak.
Here’s what you’ll need:
- 1 English cucumber, halved lengthwise
- 2 Tbsp sesame oil
- 1 Tbsp soy sauce
- 1 Tbsp sesame seeds
- 1/2 Tbsp lemon juice
- 1 tsp grated fresh ginger
- 1/2 tsp honey
- 1/3 cup cilantro, chopped
Cut the cucumber into small chunks, place in a medium bowl and toss with 2 tsp salt. Let sit for 10 minutes, then transfer to a colander and rinse. Do your best to get all the water off.
In a separate bowl, whisk together the sesame oil, seeds, lemon juice, soy sauce, ginger and honey.
Add the sauce to the cucumbers, then add the cilantro and toss to combine.
