As most people know, you can just stick a ham in a crock pot or the oven, cook it to temp, serve and eat. But if you have a little time and are willing to make a little effort, double smoking your ham can be a game changer. Here is a recipe with some real nice citrus notes.
Here’s What You’ll Need:
- Bone in Ham, like this beauty from Salmon’s Meat Products

Glaze Ingredients:
- 1/2 cup stone ground or whole grain mustard
- 1/2 cup orange marmalade
- 3 Tbsp lime juice
- 1 tsp black pepper
Preheat your smoker to 300 degrees.

Combine the glaze ingredients in a small bowl. Score the ham in a cross hatch pattern on all sides (except the cut side if it’s a butt end) and put it in a large foil pan. If you have a cut end, put that side down.
Brush the ham with about half of the glaze and put it in the smoker. Smoke for about 90 minutes, then apply the rest of the glaze. Continue smoking until the internal temp reaches 160 degrees.
Meanwhile, make the sauce.
Sauce Ingredients:
- 2/3 cup mayonnaise
- 2/3 cup sour cream
- 2 Tbsp fresh dill, minced
- 1 tsp white vinegar
- 1/2 tsp salt
- 1/2 tsp black pepper
- Zest of two oranges, and 1/4 cup juice
- ** 1/4 cup horseradish if you like a little heat
Whisk sauce ingredients together in a small bowl and set aside, or place in the refrigerator until ready to serve.

Once the ham has reached the proper temp, carve it and serve it with the sauce.
