Injecting Cajun Butter into this turkey breast helps keep it moist and juicy. You’ll need a turkey breast and Cajun rub.
Cajun Rub
- 2 Tbsp paprika
- 2 tsp kosher salt
- 2 tsp onion powder
- 2 tsp garlic powder
- 2 tsp cayenne pepper
- 1 1/2 tsp white pepper
- 1 tsp thyme
- 1 tsp dried oregano
- 1/2 tsp black pepper
Mix ingredients together.
You’ll need the rub for the outside of the turkey breast and for the Cajun Butter Injection.
- 1 cup apple juice
- 1/2 cup honey
- 1/2 cup clarified butter
- 2 Tbsp Cajun rub
Whisk together the injection ingredients in a small saucepan, and bring to a boil to dissolve the honey. Remove from heat and allow to cool completely.
Rinse the turkey and pat dry. Then, wrap the turkey breast in plastic wrap. Inject the turkey breast with the Cajun butter. Reserve the remaining injection. Remove the plastic wrap and sprinkle the turkey breast with the remaining Cajun rub.
Smoke the turkey breast at 300 degrees until the internal temp reaches 165 degrees. Inject the hot turkey breast with the remaining Cajun butter. Then tent with foil and allow to rest for 15-20 minutes before slicing.
