Each week, I stop by Festival Foods and grab some goodies to go and Bake Someone’s Day. And sometimes, I bring along something I whipped up at home. This week, it’s Lemon Drop cookies. This are so ridiculously easy to make, that I should make them and eat them every day.
Here’s what you’ll need:
1/2 cup butter (room temp)
3/4 cup sugar
1 egg
1 TBSP half & half
1 tsp lemon zest
1 1/2 cups flour
1/2 cup finely crushed lemon drops
1 tsp baking powder
1/4 tsp salt
Preheat oven to 350.
In a large bowl, cream the butter and sugar until light and fluffy. Beat in the egg, half & half and lemon zest until well combined. In a separate bowl, combine the flour, lemon drops, baking powder and salt. Add the flour mixture to the butter mixture and combine.
Drop by teaspoonfuls onto a greased baking sheet. Bake for 8-10 minutes until the edges begin to brown. Cool one minute, then transfer to a wire rack to cool completely.
