This is really more of a technique than a recipe as you can use whatever rub or sauce you want.
Get some country style ribs (cut from pork shoulder), your favorite rub and your favorite sauce.
Start by covering the ribs with some plain yellow mustard. You won’t taste it afterwards, it just helps the rub stick. Generously apply the rub all over the meat and let rest while your smoker comes up to temp. Get it rolling at 235°.
Smoke the meat for approximately 4 hours, or until the internal temp reaches about 175°. Watch the temp. Mine got done early and I left them in for a while longer – some got a little dry.
Then remove from the smoker, let rest for 30 minutes, then rough chop into 1″ cubes. Then toss with more rub and some of your favorite BBQ sauce. Remember, more rub = more bark!
Smoke 2 more hours on full smoke, then serve immediately.
