My lovely wife Bridget was given this recipe from a coworker and it is the best chicken salad I have ever eaten! Try it. I might add that she always uses the grapes and doubles up on the sunflower seeds because I really like them.
Boil 3# chicken breast
with 6-8 chicken cubes
Let Cool
Boil Orzo Pasta
Pasta should be firm
also let that cool
Chop: Red Onion
Green, red, yellow and orange peppers
Broccoli, Califlower about 2-3 cups or what you would like.
1 Cup sunflower seeds or sliced almonds
Sauce:
4 cups Mayo not miracle whip
8 tablespoons apple cider vinegar
1 cup sugar
Mix well pour over salad
toss and refrigerate
if you have fresh red grapes-you can slice them in about 2 cups.
