Bear's Hickory Smoked Country Style Ribs
4 lbs of Country Style Ribs
One cup Chili Powder (dark variety)
Soy Sauce
1/2 cup Garlic Powder
Seasoned Salt and Coarse ground Black Pepper
Hickory Chunks (not chips) soak these for at least four hours before cooking ribs
Put ribs in sink and coat each rib with with soy sauce. Then coat each rib with chili powder...rubbing it in. Next, sprinkle on the garlic power to each rib. Sprinkle on te seasoned salt, but be carefull here....you don't want the ribs too salty. Sprinkle on pepper. If you want to add a few teaspoons of celery seed..go ahead.
This all needs to be done at least 24 hours before grilling to allow the flavor to absorb.
Use the indirect method on the Weber...banking the coals to each side. Do not use too amny coals....use about 3/4 the amount normally used. When the coals are ready, use tin foil to make a drip pan. Add the hickory chunks and place the ribs the middle of the grill.
The ribs should cook for two hours. You should add more hickory chunks after about a half hour of cooking.
I use a full sized Weber, but if you must use a gas grill, use very low heat and do not put ribs directly over flames.
Add BBQ sauce about 15 minutes before serving.
