One of the great things about smoking meat is that there are almost always leftovers. Then, much like Thanksgiving, the challenge becomes how to use the leftovers in new and unique ways. Here is a great recipe for using your pulled pork leftovers.
Unlike most recipes, I’m not going to tell you how much of each ingredient you’ll need, because it’s all about the layering!
Get an 8×8 or 9×13 pan (depending on how much leftover pork you have and how many people you are feeding), I used an 8×8 pan and it made about 8 sandwiches.
Here’s how you stack the layers:
- Start with a layer of pulled pork.
- Cover with strips of red or green pepper.
- Add a layer of onions (I had some diced already, otherwise I would have probably cut them into strips)
- Sprinkle some Parmesan over that.
- Add a layer of shredded mozzarella.
- Tear up a slice of provolone and sprinkle around.
- Top with cooked crumbled bacon.
- Finally add a layer of cream cheese.
- Repeat! (I did 3 layers)
Preheat the oven to 375°.
Bake covered in foil for 20 minutes, then uncovered for another 10. Serve on hoagie buns with your favorite BBQ sauce.
