Cowboy Caviar

Had this at a party on Sunday and I made a huge batch and the whole family loved it!!

Pretty easy too....

Cowboy Caviar
1 can pinto beans
1 can black-eyed peas
1 can shoe-peg corn (this is hard to find in Esky, often I just use a small can of corn)
(I put all of the above in strainer, rinse, then put in large bowl)
1 green pepper, diced
1 red pepper, diced
1 cup onion, diced
1 cup celery, diced
1 1/2 cup cider vinegar
1 cup oil
1 cup sugar
1 tsp salt
1 tsp pepper

Mix vinegar, oil, sugar, salt & pepper in a sauce pan. Heat until sugar dissolves; do not boil. Pour over rinsed beans and vegetables. Mix all together. Soak for 2-3 hours. Drain. Serve with scoops or other chips.
